Peanutty Chicken Salad Pita Pocket
- 3 cups diced, cooked chicken
- 2 celery stalks, sliced
- 4 green onions, minced
- 1/2 cup halved, seedless grapes
- 1/2 cup dry-roasted peanuts
- 3/4 cup mayonnaise
- 3 Tbls. Major Grey's chutney
- 1/2 tsp. curry powder
- salt and pepper to taste
- lettuce leaves, washed and dried
- 4 pita breads, halved
In a large bowl, combine chicken, celery, green onions, grapes and peanuts. In a small bowl, combine mayonnaise, chutney, curry powder, salt and pepper. Stir dressing into chicken mixture. Chill thoroughly before serving with lettuce leaves in halved pita bread pockets. Makes 4 servings. Courtesy of the Texas Peanut Producers Board.
