Peanut Butterscotch Muffins

  • 2 cups baking mix
  • 1/2 cup granulated sugar
  • 1 tsp. cinnamon
  • 1/2 cup sweetened applesauce
  • 1 egg
  • 1/3 cup milk
  • 1/2 cup chopped peanuts
  • 1/2 cup butterscotch chips

Preheat over to 400 degrees. Grease the bottoms only of muffin tin cups or line with paper cups. In medium-size bowl, mix together baking mix, sugar, cinnamon, applesauce, egg and milk. Stir in chopped peanuts and butterscotch chips. Fill muffin cups 2/3 full with mixture. Bake for 18-20 minutes. Cool 1-2 minutes before removing from tin.

Yield: 12 standard-sized muffins or 6 large muffins
