PBJ Muffins

    Cupcakes:
  • 1 box yellow cake mix (1lb., 2.23 oz)
  • 1 1/3 cups water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 3/4 cup peanut butter
  • 1/2 cup strawberry preserves
  • cupcake paper liners
  • 1/4 chopped peanuts for garnish

    Peanut Butter Frosting:

  • 1/2 cup softened butter
  • 1 cup peanut butter
  • 1 1/4 cup confectioners' sugar

Combine cake mix, water, oil and eggs according to package directions. Beat in peanut butter. Half fill cupcake liners with cake batter, top with 1-teaspoon strawberry preserves then fill liners two-thirds full. Bake at 350° F. 15 minutes or until tester comes out clean when inserted in middle of cupcake. Cool and frost with peanut butter frosting. Sprinkle with chopped peanuts.

Yield: 24 cupcakes
