Banana Surprise Muffins

  • 1-1/2 cups all purpose flour
  • 1 cup quick-cooking oats
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk, when using honey (3/4 cup when using sugar)
  • 1/3 cup canola oil
  • 1/2 cup honey or granulated sugar
  • 1 cup mashed ripe banana
  • 16 rounded teaspoons chunky peanut butter
  • 1 cup coarsely chopped honey-roasted peanuts

Heat oven to 400° F. Stir together the flour, oats, baking powder, baking soda and salt. Mix egg, milk, oil, honey or sugar and mashed banana together. Add this mixture to the dry ingredients and stir just until moistened. Line standard-sized muffin tins with papers or lightly grease and fill 1/3 full of batter. Place a rounded spoonful of peanut butter in the center and cover with another 1/3 of batter. Spray muffin tops with butter-flavored cooking spray and sprinkle with peanuts. Bake 20 minutes or until golden brown. Cool on a rack. Store in an airtight, covered, container.

Yield: 16 muffins
